Tasty Harvests: Cooking Water Spinach With Shrimps

Water spinach / kangkong is an Asian Greens that is easy to combine with other ingredients for a delicious dish for the family.

Water spinach is a vegetable that is fast to harvest and easy to grow in our area. Besides pak choy. We can even grow water spinach without any fertilizer at all.

They are even sometimes called wild vegetables because they spread so easily and grow abundantly.

Coincidentally, this time, I will harvest water spinach / kangkong accompanied by a new cat who just came to my house. (It seems like he was thrown away by someone in my garden).

I will cook water spinach this time for lunch, with shrimp ingredients. With simple seasoning but truly yummy since my husband approved of the taste.

First, I harvested enough water spinach. Also, I harvested some red chilies to complete my cooking this time. You can use red bell peppers as a substitute for chilies.


I also harvested kaffir lime leaves and bay leaves. These two leaves are super herbs that make cooking smell heavenly good!

THE INGREDIENTS

  • 250 grams of shrimps
  • 2 bunches of water spinach

Seasoning

  • 5 cloves of garlic, finely chopped
  • 3 cloves of small red onion, finely chopped
  • red chilies
  • 3 bay leaves
  • 3 kaffir lime leaves
  • 2 tbsp of sweet soy sauce
  • 1/2 tsp of salt
  • 1/2 tsp of pepper
  • 1 /2 tsp of coriander powder
  • 1/2 - 1 cup of water



COOKING INSTRUCTIONS

Clean the shrimps. To make the process of consuming this dish easier later, I removed the skin and heads of the shrimps.

Cut the water spinach into pieces just using hands, not a knife to keep the nutrients from being damaged.

Prepare the seasoning ingredients. Finely chop garlic and red onion, and also slice red chilies or red bell peppers.

Preheat cooking oil, then add chopped garlic, chopped red onion, bay leaves, and kaffir lime leaves. Stir-fry until it becomes fragrant.

After it becomes fragrant, add chilies, sweet soy sauces, salt, coriander powder, and pepper. Stir well.

Add water spinach pieces. Then, keep stirring for a while until the seasoning looks mixed with the water spinach.

After that, add shrimps and water. You can use 1/2 cup of water or 1 cup of water according to your taste preference. My husband and I like soupy dishes, so I added 1 cup of water.

Cook for 3 minutes to 5 minutes according to your taste. If you still want a crunchy texture of water spinach, use only 3 minutes.

Serve water spinach side dishes with rice, topped with sesame seeds! Oh, sooooo good! The key to authentic flavor comes from kaffir lime leaves and bay leaves. Combined with garlic and soy sauce! It's all perfect!

What a lovely looking garden. Your decision to plan vegetables instead of flowers is awesome so that your family can consume fresh vegetables. I was amazed at how easy water spinach is to grow and care for

Since your garden in out in the open, how do you keep pests from eating the leaves? If they do come, how do you safely remove them without getting chemicals on your vegetables?

I love shrimp with veggies. Lovely post with easy instructions and not a ton of ingredients, but look flavorable.
