Spiced Coconut Rice (Indonesian Nasi Lemak)
One of Indonesian people's favorite menus for breakfast, nasi lemak which tastes very tasty from coconut milk ingredients.
Nasi Lemak means fatty rice in English words. Fatty comes from creamy and savory sensation from coconut milk ingredients. So, sometimes people call that menu with savory rice or fatty rice.
It's easy to make, especially if you use a rice cooker. We only need to mix the rice with the spices used. The spice content made me name this menu Spiced Coconut Rice.
Well, that morning I decided to make Spiced Coconut Rice to serve with simple ingredients such as wild spinach, baby corns, and tomatoes.
That morning, to be honest, I had run out of vegetables in the refrigerator. I only have 3 baby corns, also tomatoes. Meanwhile, in my garden there is a wild spinach which I often use for my daily side dishes.
I quickly took the wild spinach from the garden. Thank goodness I got enough wild spinach to mix it with baby corns. ❤️
By making Spiced Coconut Rice you will create dishes that taste delicious even with simple ingredients. I'm sure, we can't resist Spiced Coconut Rice. It's really appetizing to be honest.
During the cooking process in the rice cooker, the aroma of spices wafted throughout the room🤣 it was still not cooked and my husband couldn't wait.
Well, let me show you how to make Spiced Coconut Rice served with some vegetables. You can replace it with your veggies as well. 😊
THE INGREDIENTS
Up to 4 servings
- 1 cup of rice
- 1 cup of coconut milk (do not use thick coconut milk. You can add water if the coconut milk is still in thick texture)
- 1 cup of water
- 1 stalk lemongrass, cut into 2 parts and flattened
- 2-3 cm of cinnamon stalk
- a thumb-size of ginger, flattened
- 2 bay leaves
- 1/2 teaspoon salt
- 1/2 teaspoon ground pepper
- 2 tablespoons of onion puree (from 3 cloves of garlic and 5 small cloves of red onion)
Veggies
- 50-100 grams baby corns
- 2 handfuls of spinach
- 1 green tomato
- 1 red tomato (tomato can be replaced with bell pepper)
- 3 cloves of garlic, sliced
- 5 small cloves of red onion, sliced
Cooking Instructions
Wash the rice until the color of the rice water does not look cloudy. Usually we wash rice 3 times.
SEASON THE RICE
Put the washed rice into the rice cooking container. Then, mix the rice with coconut milk, water, also with salt, onion puree, and ground pepper. Steer them well. After that, add flattened ginger, lemongrass, cinnamon stalk, and bay leaves.
Then cook in a rice cooker. When cooked, the rice will look a little damp but that's not a problem if it's still hot.
So, we have to stir them well after they are cooked and leave it for a while. Their texture will become drier once the hot steam dissipates.
While the rice is cooking, prepare the veggies. Heat a little oil, then stir-fry slices of garlic and red onion.
Add baby corn and spinach. Add a little water, and cook them for about 3 minutes.
After 3 minutes, add salt and chopped tomatoes. Cook again for 2 minutes.
SERVING WAYS
I served Spiced rice with vegetables on top. I used a cake cutter to shape them into one beautiful whole.
Also, I added slices of cucumber which I shaped into flowers. You can also add fried onions for extra crunchy sensation.
I'm very happy that my version of Nasi Lemak can be this delicious. My husband and I finished the rice for lunch. But these vegetables are only for breakfast because they contain spinach which must be finished immediately.

I love dishes with coconut milk but this one is exquisite. Normally I cooked rice separately then prepare dishes with coconut milk but this one seems opposite but I love the idea.
