Lemongrass Mashed Potatoes With Mushrooms
Fresh aromatic boiled potato from lemongrass seasoning is a fun new way to eat mashed potatoes.
It's not easy being a person with a tongue accustomed to enjoying food with strong seasonings. Including me, and other Indonesians.
We are used to using rich spices to create a strong taste on our taste buds. Plus the heat from the spicy seasoning. That sounds crazy, but it's a fact.
Ginger, lemongrass, aromatic ginger, bay leaves, kaffir lime leaves are examples of the many spices and herbs that we use to enhance the taste of our food. Besides of course the addition of garlic and red onions.
A New Way To Enjoy Mashed Potatoes
Since I started a weight loss diet program, I eat potatoes more often than rice. Usually I just boil the potatoes. If I get bored, then I'll fry the potatoes only in the air-fryer to avoid the deep-frying method with lots of oil.
This time, I got a new idea to serve Mashed Potatoes with new seasoning. This new idea is to use lemongrass seasoning.
I got this idea when I wanted to move lemongrass plants to another area. I am reminded of a local chili sauce recipe that uses slices of lemongrass to enhance the taste and fragrance of the sauce.
So, I wanted to apply that idea to spice up Mashed Potatoes even stronger.
Here is a bunch of my lemongrass plants that were affected by my house renovation a few months ago. Accidentally, my lemongrass plants were hit by rocks from the torn down wall of the house.
Still lucky, there are some stems of lemongrass plants that can still be saved. I took some lemongrass sticks to cook. The rest, I plant back in a better place.
Uppps, my face is hiding behind the lemongrass leaves. Let's continue cooking.
Note: Do not use old lemongrass or green parts of lemongrass. Only use the white inside of the lemongrass for great taste.
The Ingredients
- 1 big potato (for 2 servings)
- 1/4 cup slices of button mushrooms
- enough carrots or peas
- 2 stalks of young lemongrass, sliced
- 3 cloves of red onion, sliced
- 2 cloves of garlic, sliced
- 1/2 of teaspoon salt
- (optional) 1/2 teaspoon of pepper powder
Cooking Instructions
Boil Potatoes
Clean and cut the potatoes. Then, boil the water that was previously boiled. Add salt. Boil the potatoes for 5 minutes.
Prepare Seasoning Ingredients
While waiting for the cooked potatoes to be boiled, prepare the seasoning ingredients. First, slice lemon grass stalk. Please remove the green part of the lemongrass stalk.
After finishing with the lemongrass stalks, next is the red onion and garlic slices.
Mash Potatoes
Drain Boiled Potatoes. Then, I used a manual chopper to make Mashed Potatoes.
Cook the Spices and Herbs
Heat the olive oil. Then add slices of garlic and red onion, also sliced lemongrass stalks. Watch them so they don't burn.
Cook The Veggies
Add slices of carrots and mushrooms after the seasoning smells good. Add about 2 tablespoons of water to prevent them from burning while waiting for the carrots and mushrooms to cook. Cook for about 3-5 minutes until the texture of the mushrooms and carrots is cooked according to your taste preference. Some people don't like mushrooms that are still chewy. Don't forget to add salt and pepper before adding the mashed potatoes later.
Cook Mashed Potatoes
Final step, add Mashed Potatoes into seasoning. At this stage, please only use low heat. Mix them well until they are completely mixed. Then remove, and serve while warm.
SERVING!
I had no idea this would be the new way to eat mashed potatoes that are soooooo good! My husband has confirmed it, so I'm not alone in agreeing that this method is delicious!
