Coconut Tofu Snacks

The abundance of coconut supplies made me think about making a delicious savory snack.

Coconut and tofu? Does it sound strange? Maybe. This is also my first time making this recipe. It turns out the results are good and delicious beyond my expectations.

Grated coconut is like breadcrumbs that make the surface of the food crispy outside.

The result is this tofu snack will be soft on the inside but crispy on the outside which is amazing!

Since I have a supply of coconut, I am really excited about this recipe. You can use dry instant grated coconut, and the results will also be similar to if you use a layer of breadcrumbs.

Then, for good results, we must use a type of tofu that is perfectly solid, not a soft white tofu. If you use soft tofu, the tofu will be easier to break.




THE INGREDIENTS

  • 200 grams of tofu
  • 150 grams of grated coconut
  • 1/2 tsp of salt
  • 1/2 tsp of coriander powder
  • 1/2 tsp of pepper powder
  • 4 tbsp of cornstarch
  • 3 tbsp of water



COOKING INSTRUCTIONS

Prepare the coconut, also clean the blackish skin on the coconut flesh. Then, grate the coconut.

Cut tofu into small pieces. Square or triangle shape.

In a bowl, mix cornstarch flour, salt, coriander powder and pepper powder, and with water. Don't make it too thick and don't make it too runny.




STEP 4

Dip tofu into the flour mixture first.

Then, add the tofu that has been dipped in the flour mixture into grated coconut. Coat the tofu with grated coconut evenly.




STEP 5

Heat the oil, then fry the tofu that has been coated with grated coconut. Fry for about 2 minutes on medium heat. Then lift and drain.

Without saying much, my husband finished this snack after I finished taking pictures 🤣🤣🤣

Yeah, make sure to choose the hard-firm texture of tofu, not smooth one like silken tofu avoid that.

Maybe you can try to find instant coconut flakes and grind them so they will similar with breadcrumbs texture :)
