Chewy Purple Sweet Potatoes Sprinkled With Grated Coconut

Sweet potatoes can be found in many sweet treats in the area where we live. Desserts made from sweet potatoes are quite popular.

You could say that the dessert menus made from sweet potatoes have a unique texture in one bite. Starting from the types of cake bars, layered cakes, porridge, sweet potato desserts.

This time I'm going to show you how I prepare sweet potatoes to make super chewy and soft desserts in one bite.

This cake is traditionally known by the Indonesian name “Ongol-ongol”. Like a super chewy elastic cake made from tapioca flour mixed with sweet potatoes and most importantly coconut milk.

Using Purple Sweet Potatoes

Well, in this recipe, we can actually use any color of sweet potatoes. It doesn't detract from the taste at all.

Here I used purple sweet potatoes for a more beautiful color.

Well, you can also use steamed pumpkin instead of sweet potatoes if you don't have sweet potatoes at home.




THE INGREDIENTS

  • 250 grams of steamed purple sweet potatoes
  • 150 grams of tapioca flour
  • 300 ml of coconut milk
  • 150 grams of sugar
  • 1/2 tablespoon salt
  • Pandan leaves
  • Grated coconut to taste



HOW TO MAKE IT

STEP 1

Peel the sweet potatoes and cut them into smaller pieces. This is to facilitate the blending process later. Then wash it clean and place it in a steamer container. Don't forget to preheat the steamer until the water in the steamer boils.

STEP 2

Steam sweet potatoes until soft, with pandan leaf to create a delicious aroma.

STEP 3

Blender steamed sweet potatoes with tapioca flour, coconut milk, sugar, and salt. Mix together until mixed well without any lump texture for the flour.

STEP 4

Preheat the steamer first. Then transfer the cake mixture into a heat-resistant container while filtering so that the texture of the cake becomes soft.

Well, put oil first on the container that will be used so that later when removing the cake from the container it doesn't become sticky.

If one steamer cannot contain all the cake mixtures, it must be divided into several parts. And don't forget to also put the grated coconut into the steamer with a little salt.

STEP 5

Steam the cake mixture for about 30 minutes with pandan leaves.

STEP 6

Take the cake, then cut it into pieces, and roll it in grated coconut. For knives used for cutting, cover the knife with plastic so it doesn't stick when cutting cakes.

😍😍😍 I really like the results of this sweet potato cake. Although I've made it many times, but this time the texture is better and feels perfect in my opinion.
