Chewy Dragon Fruits With Grated Coconut
Have you ever eaten chewy cakes made from sticky rice flour? Similar to mochi, also boba drink which has been popular for several years on social media.
In Indonesia, we have many variations of chewy cakes served with grated coconut. The most popular is klepon. Inspired by klepon which uses pandan leaves juice ingredients. This time, I made chewy cakes with beautiful pink color.
I have some supplies of baby dragon fruits that I bought from a cousin of mine who sells fruits and vegetables. They are called baby dragon fruits because their size is smaller than dragon fruits in general.
I'm thinking of other menu ideas that I can enjoy besides raw consumption or just making dragon fruit juice. So, I thought about the chewy cakes that I usually make with sweet potatoes or pumpkin ingredients.
I have coconut flesh that needs to be used immediately. So, it would be a good idea to combine dragon fruits with grated coconuts.
In fact, the use of dragon fruit in this chewy cake recipe is more dominant for natural coloring. Meanwhile, the taste of dragon fruit itself is not too dominant, but just a little sweet.
For the record, here I use sticky rice flour. But you can also use tapioca flour. Both types of flour are gluten free and will produce a chewy texture.
If later you don't find the right dough to shape into balls, or cakes, you can add more flour or more water if the dough is too hard.
THE INGREDIENTS
- 2 cups of sticky rice flour
- 150 grams of coconut flesh, grated and steamed
- 1-1 1/2 cups of dragon fruit juice
- 1/4 cup of sugar
- 1/2 tsp of salt
- (optional) pandan leaves, or vanilla

Look at those beautiful cakes! I love how the overly red dragon fruits turn a beautiful pink when mixed with sticky flour. Also, when added grated coconut.
In fact, these chewy dragon fruits are sooooo good! In fact, my husband asked me to make it for him the next day. But sorry to say, I'm really tired of mixing it all up. Lol.

I never thought that dragon fruit can be used to make chewy cakes. Maybe if I tried your food , I would be able to eat dragon fruit.😊 I'm not a fan of dragon fruit.😊
