A Red Bell Peppers Stuffed With Tofu Recipe

Actually, I miss cooking. You also see that I rarely post recipes lately. That's because I'm rarely at home.

Like today, I'm still staying at my mother-in-law's house. But I want to make a breakfast full of protein. So I'll cook a simple menu for breakfast.

Since I've been focusing on lifting weights, I've become more aware of high-protein foods. Consuming high-protein foods also makes us full longer, and it makes us not crave sweet foods. That's what I feel.

This time, I'm going to share a recipe for bell peppers stuffed with tofu and eggs. And, you can combine it with your favorite vegetables.

This bell pepper recipe is cooked by steaming so this food is suitable for those of you who are looking to reduce oil.




THE INGREDIENTS

  • 2 red peppers
  • 100 grams of white tofu
  • 2 eggs
  • 1 tomato
  • 10 grams of shallots
  • 10 grams of garlic
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of sugar
  • optional: red chili and cayenne pepper



COOKING INSTRUCTIONS

Prepare the onions and chilies first. You can also add a little spring onions. Chop shallots, garlic, also chilies. Also, chopped tomatoes. Then set them aside.

In a bowl, mash the tofu with a fork. Don't make it too soft because the tofu will become too watery.

Add two eggs, also add chopped garlic, chopped shallots, chopped chilies, and also chopped tomatoes.

Mix them well until they are perfectly mixed into a good filling dough.

Prepare the paprika. Wash the paprika thoroughly. Then carefully cut the top of the peppers.

Discard the seed filling inside the peppers. I use a spoon to make it easier to remove the seeds.

Put the tofu and egg filling that has been made into the prepared peppers. Put the mashed tofu filling until it fills the peppers.

For excess mashed tofu filling that cannot be put into the peppers, then you can use a regular bowl to steam the side of the tofu filling later.

Well, don't forget to prepare a steamer, then steam the peppers that have been filled with mashed tofu. Steam them for 10 minutes. If you want a softer paprika texture, you can cook it for 15 minutes. Adjust to your taste.



THE RESULTS

Tadaaaaa! This is the result! The mashed tofu and eggs filling looks firm but also soft. The paprika skin still looks crunchy.

Serve the tofu-stuffed paprika with your favorite sauce! Oh, this is really delicious and rich in protein.

You can also add peas, or even chopped almonds for extra sensation! Just be creative and see you! ❤️

I love stuffed bell peppers. The different color peppers create a lovely decoration on the plate. What I like inside my stuffed pepper is rice and a protein, usually ground beef. Of course, the veggies add flavoring. I usually eat it for lunch or dinner, and haven't had it with eggs for breakfast. I'll have to try it.

Also, baking the stuffed peppers gives it an added flavor in my opinion. Thanks for sharing.

Yes, the baked ones are delicious because the sauce you surround it with has a chance to seep into the pepper and blend with the ingredients inside.
