A Beautiful and Amazing Traditional Banana Cake Recipe

A cake that taught me to always work hard to get the best results.

Each generation certainly has a different food serving culture. Currently, it has been influenced by busyness so that people choose food with a practical way of serving. While the previous people were more patient because they used ingredients and materials available in nature without being influenced by technological advances.

One of them is about making cakes. There are many cake molds that we currently use. Meanwhile, the previous people used cake molds made of banana leaves, pandan leaves, coconut leaves, and more. Indeed, it is very tiring to make mold shapes with leaves. But overall, these natural molds will enhance the taste and aroma of the cake.

I have also often shared with you traditional recipes from my area that use various leaves to wrap food or as cake molds.

This time, I will invite you to see how I make a traditional cake served using a cake mold made of pandan leaves.




When I'm not busy in the kitchen, I can explore recipes that take a lot of time. This time it was after the rain and I couldn't garden. So, I used the time to make a beautiful and amazing cake with the ingredients available in my kitchen.

I have a supply of ripe bananas. The type of banana that is not meant to be eaten directly because it tastes a little sour and a bit gummy if not cooked. So, I had an idea to combine the ripe bananas with rice flour and coconut milk, also agar powder.




MAKING CAKE MOLDS FROM PANDAN LEAF INGREDIENTS

I also have a lot of old pandan leaves that are long in size. Because to make a cake mold from pandan leaves, old leaves with a long size are needed so that the pandan leaves are not damaged when the cake mixture is added on top.

I took a clump of large pandan leaves. Then, I washed them, removing the soil that stuck to the middle of the pandan leaves.

After washing them clean, I cut the pandan leaves one by one from the main stem. Use about 10-15 quality pandan leaves.

Prepare a stapler to lock the hooks on the pandan leaves that have been assembled into a mold. Also, prepare a ruler or measurer to make the sides of the mold the same size. And, a pair of scissors.

Then, start to assemble the pandan leaves. Make 5 lines on one side of the pandan leaf. Use a pair of scissors, then cut the 5 lines but only on one so that it is not broken. Use a length of 5 cm for each area. Then, also cut 5 cm to add to the bottom of the pandan leaf mold that has a hole.

After getting 5 lines that have been cut on one side of the pandan leaf, attach the sides to form a box, and hook it with staples.

At the bottom of the hole, insert a 5 cm leaf as well. The final appearance of the mold will look like a checkered cake mold.

Set aside the pandan leaves cake mold and it's time to make an easy cake batter. No mixer, no oven.

THE INGREDIENTS

  • 2-3 pieces of hard-textures ripe bananas
  • 100 grams of rice flour
  • 800 ml of coconut milk
  • 1/2 tbsp agar powder
  • 1/2 cup of sugar
  • 1/2 tsp of salt
  • 1 pandan leaf, knotted

COOKING INSTRUCTIONS

Bring water to a boil, then add bananas. Boil for 10 minutes, remove and set aside.

Prepare a large cooking pot. Then, add 800 ml of coconut milk, 1/2 cup of sugar, 1/2 tsp of salt, 1/2 cup of sugar, 1/2 tbsp of agar powder and 100 grams of rice flour. Also a pandan leaf. Stir well until there are no lumps before turning on the heat.

Once the cake mixture is well mixed and there are no lumps of flour, turn on medium heat. Keep stirring them as they will thicken like pudding over time.

Once the cake mixture thickens, remove them and place them in pandan leaves molds.

Slice the boiled bananas, but not too thinly.

Fill the cake into the pandan leaves mold until full. Then, add 3 slices of bananas.

Decorate these beautiful banana cakes with pandan leaf ribbons! For a more delicious taste, we can store the banana cakes in the refrigerator before serving.

Their texture will be firm, like a jelly pudding dish but also smooth like porridge. A unique combination because it uses agar powder and rice flour ingredients.

I tried a Thai corn-cake delicacy that looks similar to your banana cake. They wrapped it with palm leaves. it has a jelly-like consistency and a strong corn flavor to it :)

yeah, it same method and ingredient, but we add corn for corn-cake :)

In some variation, people also use maizena flour. But coconut milk is a must have ingredients :)

I wish we had pandan plants, too.. but we don't..I truly like its aroma, especially when placed on top of the rice when cooking...
