Go for it ! You might find people on places like Upwork, but there's always the risk that they'll keep a copy of the work and use it to make money for themselves.
Moving on beyond mobile games, the budgets can spiral insanely; many Playstation or XBox games nowadays have budgets comparable to a Hollywood blockbuster, and are produced by studios with dozens or hundreds of people working for them (although I suspect some are just there to make coffee....).

Being paid to make coffee would be a pretty good gig. (I literally just wrote that, and remembered that Baristas are a thing lol)
My plan would be to start off small with a mobile game, maybe another - obviously after costing things out and pricing it all - and then one day expand and build up to doing a bit larger, but obviously no where near the costs or scope that the larger studios can do.
Some of the ideas I have floating around are pretty decent. I even have one idea that I was thinking of to be built here on Hive as a blockchain game. What it all boils down to though, is money. Fingers crossed that things go well during this run.
