Garden Journal - Harvesting The Basil

The basil in our greenhouse has been growing like a weed !

So yesterday my wife harvested a load of it. There's still quiet a bit left on the plant, so it should grow back and give us at least one more batch before winter.

There are also enough leaves left to be able to pull off the occasional one to use fresh in cooking, but the idea today is to harvest leaves while they are at the perfect stage and dry them so they're preserved to use over winter.

Here's the colander full of the plucked leaves, just before washing.

After washing the basil, it was put on kitchen towel and dried in the microwave. This is a job which has to be done very, very carefully ! Regular checks are needed every few seconds; the goal is to totally dry the moisture out but not reduce them to ashes.

This also makes the kitchen smell amazing ! The aroma of basil is just delicious.

By the end of the process, the dried leaves are crispy enough to crumble up and put in an empty spice jar. Before being tightly closed, my wife also put in one of those little packets of desiccant granules. Both the jar and the desiccant were very much re-purposed, so nothing new had to be bought.

So there we are - one more step in the journey towards self-sufficiency, and one more thing we won't have to buy from the supermarket. It'll be interesting to see how much basil we'd need to not need to buy any at all !

I miss my basil plants now... need to grow them again in the spring... in about a month.

You know you should ! If you grow enough and preserve it, it's one less thing you have to spend money on through the year 😀

Thank you ! Well mostly it's just a nice-tasting herb that really adds to the flavour of pasta sauce, pesto, and lots of other dishes. But I believe it's also got some herbal properties and the plants can act as a mosquito repellent. Although I think we'll need a lot more of it for that. Far too many mozzies this year, I'll have to have a word with the frogs, they're not doing a very good job.

Our basil (no greenhouse) also grows like weed - we love it! We make pesto every week at least once and use it on pasta, pizza and everything in between. Drying it is a good idea, we use a lot of it so maybe I'll do that, too. But in a microwave? I've never heard that. Good job!

Thank you ! It seemed to work, and was quick enough that as long as it doesn't burn it should keep most of the flavour and nutrients in. This year is experimental - picking a few things we use lots of, seeing how long what we grow lasts, and then working out how much we'd need to grow (and how to preserve it) so that one plant at a time we become totally self-sufficient.

Thank you ! Although it's best fresh, here in the UK it won't grow all year round, so we're preserving a load of it to keep us going through the autumn and winter.

I never seen that kind of vegetables here in our Country but it looks like very delicious of its aroma.😊
