The last day of 2023, a year in which I lost my mother, I miss her, but both she and my grandmother, raised me to understand that death is part of the cycle of life, in addition to this great loss also died two of my cats Manchita and Akiles, which were particularly fond of my mother.

Even with the sadness for their absence, we have prepared to say goodbye to this year with joy, because not everything was bad, I achieved some things that were not planned and others that although they were in plans I thought I could not, here I tell you a little of how we prepared for today and so you will see a little of what we did.

First, thinking about not leaving everything to the last minute on Wednesday we went to buy the meat to prepare a delicious roast, it cost a little to get the right cut, but we managed, we also bought the potatoes and carrots for the chicken salad, a dish that is usually eaten a lot at this time of the year, for those who do not know the recipe, basically it is about boiling small pieces of potato and carrot, strips of chicken or hen breast are added, it should be chicken, it gives better flavor, a touch of chopped onion, peas (I do not add), green apple in small pieces and salt to taste.

On the other hand, remembering the huge queues in the bakeries for the celebration dates, yesterday we bought two loaves of ham, another of the traditional delicacies of these dates, so for today we only had to mix the ingredients of the salad to make it fresh and sit down to dinner, obviously yesterday the house was cleaned thoroughly.

Now, there is another part of this holiday season which is to be attentive to my cats, as most of them get very stressed with the fireworks, so if necessary they will all sleep in bed with me and I know that my husband will not be upset at all, as he knows what they represent to me and he has come to love and respect cats even more.
