Honey Grilled Pork Noodles
Hanoi is famous for its bun cha, I have written about bun cha many times but Bun Cha Mat Ong is truly a memorable stop. Although this restaurant looks simple, it is always crowded with customers because of the unique flavor of the dish.
The meat here is grilled over charcoal until golden brown, bringing the fragrant aroma of grilled meat on the edge. The special thing about grilled meat is that it is marinated with lemongrass and honey, creating a sweet, rich flavor that is different from other bun cha restaurants. The grilled meat is soft, not too dry, when eaten with soft white noodles, it creates a perfect combination.
The broth at this restaurant is really delicious. Simmered from marrow bones for many hours, the broth is clear and sweet, not harsh like many other places. In particular, the broth has very little or no MSG, which really makes me feel comfortable and secure when enjoying it. I am very afraid of restaurants that use a lot of MSG, because they often make the broth brackish and create an uncomfortable, dizzy feeling after eating.
Each bowl of bun cha includes grilled meat skewers and meatballs placed on soft white noodles, then poured with a sweet broth. Each piece of grilled meat is soaked in spices, combined with delicious broth, topped with lots of chopped green onions, creating a dish that is both beautiful and delicious. When eating bun cha, you need to eat it with herbs and other spices such as garlic, chili, lemon, and spicy bamboo shoots, to complete the flavor. This bun shop only sells in the morning, so I often eat here at 5am, which is the best time to have breakfast because the sun has not made everything hot at this time.
